Arrr, me hearties!
Today we’re going to be looking a sauce from the Cornish Chilli Company and it’s one that I’ve been really looking forward to showcasing.
It’s one of their three, fish-themed, slightly boozie concoctions but, unlike the other two, it’s not made using a strong flavoured drink.
The Red Snapper uses vodka – Probably the least flavourful of all alcohols. It tastes of volatility and occasionally some very mild creamy notes but, unless you’re really scraping the bottom of the barrel in quality, it’s not going to flavour a cocktail.
So why put it in a sauce?
Well, I did some research and the answer I found was a tad more scientific than I expected.

It was a great festival with searing heat, in more ways than one to tell the truth, but I survived the summer sun and made it back with some awesome finds. Perhaps even a few too many.
Yet, while they all stood out to me in one way or another, Dorset Meadows, from the chilli shop of the same location, stood out more than most.
For a start, it was wrapped in a smooth foil label that really caught the sunlight on their stall but, beyond that, it also has some pretty unusual ingredients:

Up first, their Sriracha.
Or at least, that’s what their website calls it. Their bottle tells a different story.
According to the bold, white, block capitals that adorn their green label, this is a “Serenade & Garlic Chilli Sauce”. Serenade being a similar chilli to the red jalapeño and the one shown beneath this text.

Something just as exciting, mind you. It’s my favourite of the Screaming Chimp’s product samples.
Last time we heard from them we took a look at their hottest “Stinger” sauce but this week we’re going back down to the very bottom of their heat scale to try out Vic’s Ol’ Smokey. A sauce that uses smoked paprika, instead of chillies, for its flavour but does back it up with bird’s eye heat.

Today’s sauce was in the news a few months back for some quite unfortunate usage but it caught my attention for another reason. For years, the UK military have been getting mini bottles of Tabasco in their ration packs but, all of a sudden, things have changed. And soldiers are just throwing their new sauces away because they’re scared.
