Ripe Flavour: Bitter, tangy, woody and slightly fruity. As much like a yellow pepper in taste as a red one. The most interesting thing about this pepper is the aftertaste, though, which is a lingering, fragrant earthiness with citrus notes that reminds me of szechuan peppercorns. Very well suited to chinese cooking and just sopping wet with juice.
