Proper Name: Ají Red*
Pronunciation: Ahh-hee Rehd
Other Names: N/A
Type: Capsicum Baccatum
Rarity: Uncommon
Seed Availablity: Trade Only
Scoville Heat Units: 40K – 70K SHU
Sauce Strength Rating**: Medium – 3/11
Colour: Greenish, yellowish off-white, ripening to red. Thin skinned, so slightly translucent.
Ripe Flavour: Fruity, peppery, slightly bitter and earthy but also somewhat sweet, in a berry-like way.
Off-White Flavour: The light and gentle taste of white or pale peach pepper, combined with hints of fresh, green vegetable and something aromatic, yet not quite floral. Put together, it’s weirdly reminiscent of peppermint but with the texture of a fresh bell pepper and a capsaicin warmth, up near its stem, instead of any menthol cool.

*While “Ají Red” is this pepper’s proper name, it is not the only pepper to use it. It is also an accurate translation and common nickname for the better known Ají Rojo.
**This value represents the heat rating that I would expect to give to a sauce using this pepper as its main ingredient. Other ingredients or particularly high purity may result in a slightly stronger sauce, while lower concentrations will yeild a weaker one and other products may vary.
